Our Cook/Chef Course teaches the basic knowledge and techniques you need to become a professional chef in a short period of time (1-year program). You will learn Japanese, Western and Chinese cuisine throughout a year. In addition, you will receive practical training in one particular cuisine in a small-group setting in the second semester. Our full-time lecturers who are professional chefs provide thorough guidance for you to learn the knowledge and skills of the cuisine of your choice.

What chefs need is the experience of working in real kitchens. The Comprehensive Cooking Course offers practical training every day in addition to lessons focusing on the worksite for chefs. In addition to cooking skills and knowledge, you will learn about restaurant management including cost calculation, menu creation, speed, and teamwork. In the second year of the course, students often run a genuine restaurant attached to YAMANOTE and develop their application and execution abilities in small-group, seminar-style classes.

Confectionery Hygiene Master Course (1-year program)

The Confectionery Hygiene Master Course gives you the solid basis necessary to become a professional confectionery chef in a short period of time (1-year program). You will learn all types of confectionery throughout the year including Western confectionery, bread, and Japanese sweets. In the second semester, you will deepen your skills and knowledge in the area of your interest in order to acquire specialist knowledge. In this Course, you will also learn about ingredients and hygiene, which are related to practical training, and confectionery theories for understanding the mechanism of confectionery making.

In the two-year Comprehensive Confectionery Course, you will learn basic knowledge on confectionery as well as advanced confectionery making skills. You can look at and eat confectionery in any other school, but what distinguishes YAMANOTE is that you can make confectionery here. The Course places emphasis on making and provides students with the experience and skills that allow them to work as confident professionals. Our curriculum includes lessons on the French language, confectionery designing, confectionery management, and practical lessons on drinks, and offers an excellent pathway to becoming a professional confectionery chef.

The W License System is designed for students who wish to obtain the two national qualifications of Confectionery Hygiene Master and Cook/Chef. Because hotels and restaurants offer both meals and desserts, they often have chefs in charge of meals and dessert chefs in the same workplace. If you are qualified as a chef as well as a dessert chef, you will be able to work in a wider range of places and will be more in demand. You can also develop your career in the future as a top chef or owner chef handling a full-course menu from appetizers to desserts.

The Café W License System is unique to YAMANOTE. You will learn foods, sweets, and drinks designed specifically for cafes, and work toward obtaining the two national qualifications of Confectionery Hygiene Master and Cook/Chef during your studies. While working toward these qualifications, you will learn everything about working in cafes: from the basics of cooking and confectionery to inspiring food presentation, multinational cuisine, drink arrangements, and customer services.
